Asiago: Partially-skimmed cow’s milk from the mountains near Venice. Sharp and flavorful.
Piave: Very flavorful and nutty. Drizzled with aged balsamic vinegar.
Fontina: Rich unpasteurized milk of Valdostana cows that graze only on alpine grass and herbs. Mild, sweet, nutty flavor with creamy texture.
Della Giorno: Today’s selection from the Strip’s finest.
